Vegan blondie recipe

Vegan Blondie recipe

This vegan blondie recipe is a great breakfast option naturally sweetened with fresh and dried fruit, cake like texture and packed with goodness.

If you have any leftover ripe fruit use it in a bake and the peanut butter and oats give these blondies a lovely texture.

Ingredients – makes about 12

1 large ripe banana
1 apple grated
Handful of fresh or frozen blueberries
2 tbs peanut butter
1 cup of oats
1/2 tsp bicarbonate soda
1/2 tsp baking powder
1/2 cup of plant-based milk
1/2 cup of chopped dates
1/2 cup of self-raising flour
A handful of granola for topping-optional


  1. Pre heat oven to 180 degrees Celsius gas mark 4.
  2. In a large bowl mash the bananas, add the apple and blueberries and combine.
  3. Add all the dry ingredients, followed by the milk, nut butter and dates and combine the blondie batter.
  4. Add the batter to a square greased baking tin.
  5. Sprinkle with some granola and bake for 20 minutes, switch off oven and leave in for another 5-10 minutes.
  6. Allow to cool, slice and keep in an airtight container.
  7. Top these blondies with yoghurt, nuts and seeds along with some fresh berries-a great breakfast option.
