Anzac biscuits

These biscuits are a good snack and contain fibre from the oats and wholemeal flour. It’s a great recipe for children to get baking and super delicious.

Ingredients
1 cup of oats
¼ cup plain flour
½ cup wholemeal flour
¼ cup desiccated coconut
1/3 cup brown sugar
1-2 tbs honey or maple syrup
¼ cup sunflower oil or spread
1 tsp bicarbonate soda
2 tbs water
1 tsp ginger powder-optional
Handful of pumpkin seeds-optional

Method

Pre heat oven 180 degrees

Add the dry ingredients into a large bowl and mix

Add the oil, sugar and syrup in a small bowl and microwave for 30 seconds

Add the bicarbonate soda into the oil and whisk

Pour the wet mixture into the dry mixture along with 2 tbs water and combine

Add a little extra water if required

Add spoonful’s of mixture on to a greased tray, flatten and bake for 10-15 minutes until crisp and golden

Allow biscuits to cool and keep in an airtight container

Optional

Add dried fruit

Add dark chocolate chips
