Energy balls

A great snack containing dried fruit and nuts and quick and easy to make. You can add any type of dried fruits and nuts and make it your own, also a great food gift to give.

Ingredients
1 cup of cornflakes
1 cup of chopped dates
¼ cup of sunflower seeds
¼ cup pf pumpkin seeds
½ cup of almonds
1 tsp cocoa powder
¼ tsp ginger powder
¼ tsp cardamom powder
1-2 tbs nut butter

Method
Soak the dates in some hot water until softened.

Add all the ingredients in a blender/food processor and blitz. Careful not to add the water from the dates as mixture will become too wet.

Add or minus ingredients as necessary to get your desired consistency.

Finally make into round balls, coat with your desired topping e.g. melted dark chocolate, desiccated coconut etc.

Place in the fridge to set for about 30 minutes.
