When it comes to snacking, we want to minimise the high sugar, saturated fat and salt snacks and opt for something that will keep us fuller for longer. These bars contain oats, nuts, dried and fresh fruit and they are a great snack for children.
Ingredients – Serves 4-6
1 cup of oats
1 pear grated
1 cup of chopped dates
1 orange zested
½ cup of chopped apricots
¼ cup of dried cranberries
¼ cup of desiccated coconut
½ cup of chopped mixed nuts
1 tbs nut butter
1 tbs honey or maple syrup
¼ cup of olive or sunflower spread
Method
Pre heat oven gas mark 4 180 degrees Celsius.
Line a square baking tray with greaseproof paper.
In a pan, melt the spread and peanut butter, add the dates, honey and orange zest and mix. Stir in the grated pear and take the pan of the heat.
In a large bowl add the oats, coconut, mixed nuts, cranberries and apricots and mix. Add the wet ingredients into the dry ingredients and mix until combined.
Add the oat mixture onto the tray and pat and spread until even. Bake the flapjacks for about 40-45 minutes until golden.
Allow to cool, cut into squares and keep in an air tight container.
Options
Add any dried fruit and nuts
Add some sunflower and pumpkin seeds
