Roast leg of lamb

Cooking roast leg of lamb can be daunting for some of us, but this recipe will show you how easy and fuss free it can be. Although few ingredients have been used the meat is full of flavour. This is another recipe you can perfect during lockdown. It makes an impressive main course, particularly for those special occasions.

Ingredients – Serves 6-8
2.5 Kg leg of lamb
5 cloves garlic
1 tbs rapeseed oil
1 tbs rosemary chopped
1 tbs thyme chopped
Salt & pepper to taste

Method
Preheat oven to 190c/5 gas, and line a roasting tin with foil

Using a sharp knife make small incisions all over the meat

In a bowl mix the remaining ingredients: rapeseed oil; garlic; rosemary; thyme; salt & pepper.  Rub the above mixture all over the meat, particularly into the cuts

Place in the oven and roast for about 1hr 45mins or until cooked. Turn the lamb halfway through cooking.

When cooked, cover lamb with foil and allow to rest for about 15 – 20mins
