Beef stew

During lockdown we can visit those recipes that we did not have the time to indulge in. With restaurants closed and more time at home why not try making those dishes that take longer. Try this beef stew recipe which takes about 3 hours to cook, it is simple and made with everyday ingredients.

Beef stew

Ingredients – Serves 4
2 celery sticks thick slices
2 medium onions chopped
4 medium carrots halved lengthways then cut in large chunks
4 bay leaves
2 tbsp rapeseed oil
2 tbsp plain flour
2 tbsp tomato puree
1-2 beef stock cubes crumbled
800g beef cubes

Method
In a saucepan add oil, onions, celery, carrots, and sauté for about 10 minutes.

Then add the plain flour stirring all the time, followed by stock cube, tomato puree, and bay leaves.

Pour 500mls of boiling water, then add the beef and allow to simmer for 10 mins.

After this remove from heat, pour in oven casserole dish, cover and cook in oven on 160c/gas 3 for 2hrs 30mins.

Finally uncover and cook for a further 30 – 45 minutes in the oven allowing the meat to become tender and the sauce to thicken.
