Another quick recipe and if you have any left overs add it into your tortillas, this is a quick lunchtime recipe using up what’s in your store cupboard and fridge and also simple to make.

Ingredients – Serves 2 – 4
1 pack of wholemeal wraps
1 tin of refried beans or any pulses
1 pack of cherry tomatoes roughly chopped
Handful of grated cheese
1 pack of spinach
1 pack of mushrooms sliced
1 onion chopped
1 tsp paprika
1 tsp chilli flakes

Drizzle some olive oil into the frying pan, add the onions and saute until browned.

Add the tomato and mushrooms and mix well.

Add the refried beans and season with chilli and paprika. Finally add the spinach and gently mix until combined and thickened.

Heat a separate frying pan and place a tortilla on the pan, then spread the bean filling on the tortilla. Add some grated cheese on top and place another wrap on top and gently flatten the tortilla with a spatula.

Allow the tortilla to cook for a few minutes on a medium heat then gently flip over so both sides are golden.

Cut the quesadillas into quarters and serve with smashed avocado.

Can use any type of wrap
Use tuna or chicken
Use frozen vegetables
