This smoothie bowl uses lots of fruit and avocado incorporating healthy fats and fibre into the recipe. This breakfast option can be made the day before and is a simple bowl to make.
Ingredients – Serves 2
2 ripe avocados
½ a punnet of raspberries
1 large banana sliced
½ a punnet of blueberries
2 kiwis sliced
Handful of desiccated coconut
1 tsp honey
½ tub of Greek or natural yoghurt
Method
Using a blender, blend the fruits, yoghurt and honey except the kiwi and keep a few slices of banana for the topping. The smoothie should be a thick consistency.
Add the smoothie mixture into a bowl and pop into the freezer or fridge to set for about 1 hour.
Top with kiwi, remaining banana and desiccated coconut.
