Porridge is a great breakfast recipe containing fibre and keeps you fuller for longer. This is a simple recipe topped with plenty of fruit and a great way to incorporate 5ADAY.
Ingredients – Serves 2 – 4
2 cups of oats
2 cups of milk-dairy or non dairy
1 tsp cinnamon
1 tsp vanilla extract
¼ cup of chopped nuts
1 banana sliced
1 kiwi sliced
Handful of dried mixed fruit.
In a pan add the oats, milk, cinnamon, vanilla and nuts and stir on a low heat until porridge has thickened. Add a splash of water or more milk if consistency is too thick.
Top with banana, kiwi and dried fruit.
Soak the oats with milk overnight, top with yoghurt and fresh fruit
Poach the fruit or use tinned fruit in juice
Add a handful of berries and nut butter
