Pancakes are a great recipe using basic ingredients from your cupboard and fridge. Its quick, versatile and easy to make. This recipe contains wholemeal flour for that extra fibre and a great breakfast option.
Ingredients – Serves 7-8
1 cup wholemeal flour
1 cup plain flour
1 cup non dairy or dairy milk
½ cup of oats
Pinch of salt
1 tsp cinnamon
1 tsp vanilla extract
¼ cup desiccated coconut-optional
1 tsp baking powder
4 ripe bananas sliced
1 tbs brown sugar
1 tbs butter or olive spread
In a large bowl add the flour, baking powder, salt, oats and desiccated coconut and mix.
Using a measuring jug add the milk and eggs and whisk. Make a well in the middle of the flour mixture and gradually pour in the milk and egg mixture and whisk until smooth batter is formed. Add more milk if mixture is thick.
In a frying pan, melt the butter followed by the sugar and allow to caramelise on a medium heat. Add the bananas and gently toss and cook until slightly burnt.
For the pancakes, heat the pan on a medium heat with some oil and ladle the mixture into a small-medium circle and cook for a few minutes on each side. Holes should form.
Top the pancakes with bananas, drizzle with honey and serve with some yoghurt.
