Vegetarian spaghetti bolognese

Spaghetti Bolognese is a popular dish. This is a quick and easy recipe, using quorn mince instead of meat. Also increase your fibre intake by having whole wheat varieties of spaghetti. The entire meal can be ready within 30 minutes.

Bolognese sauce

Ingredients – Serves 4
2 brown onions finely chopped
3 tbsp garlic infused olive oil
500g quorn or soya mince
2 x 400g tins chopped tomatoes
2 tbsp dried Italian herbs
2 tbsp tomato puree
Salt and Pepper to taste

Method
In a saucepan heat oil and add onions, once golden add tomatoes with juice first then the remaining ingredients. Allow to simmer for about 20minutes. Add a little water if necessary. Garnish with basil leaves.

Spaghetti
Ingredients – Serves 4
400g whole wheat spaghetti
Salt to taste

Method
Cook spaghetti in salty boiling water according to instructions on package
