This dish is an ultimate hearty meal full of flavour, spices, plenty of vegetables and pulses. A meal that can be freezed, used for your next day lunch and lasts for a while.
Ingredients – Serves 15
1 tin of chopped tomatoes
1 pack of carrots chopped
1 pack of mixed peppers chopped
1 pack of green beans chopped
2 tins of mixed pulses drained
1 pack of sliced mushrooms
1 onion chopped
1 garlic clove chopped
1 bag of spinach
1 pack of fresh parsley
1 tsp curry powder
1 tsp garam masala
1 tsp paprika
¼ tsp turmeric
1 tsp chilli flakes
Method
In a large pan drizzle some rapeseed oil and fry the onions and garlic until browned.
Next add all the vegetables except spinach and sauté for a few minutes, add the pulses and mix well.
Add 1 tin of chopped tomatoes along with all the spices, mix and simmer for about 20-30 minutes minutes until thickened. Add a splash of water if mixture is dry.
Garnish the casserole with parsley and serve with naan bread or brown rice.
