This time of year our immune system can get weakened with the drop in temperature. Fruit and vegetables provide all our vitamins and minerals and this platter certainly provides some Vitamin C.
This is a refreshing snack/dessert/breakfast option.
Ingredients – Serves 15
2 packs of kiwis
1 pack of fresh mint roughly chopped
1 tin of sliced peaches in juice drained
¼ cup of chopped nuts
¼ cup of roasted flaked almonds
¼ cup of desiccated coconut
1 tsp vanilla extract
1 lemon rind only
Method
Slice the kiwis, overlap each slice in a circle on a flat flan dish, leaving a small gap in the middle.
Place the peach slices in between the kiwis and around the middle.
Meanwhile toast the chopped nuts, coconut and add the vanilla, mix until slightly browned.
Top the fruit platter with lemon rind, mint, nut mixture, flaked almonds and serve with some natural yoghurt.
