Filo pastry mince pies

This recipe is quick and easy and an alternative to traditional mince pies. Fresh fruit and spices have been used and filo pastry is lighter and contains less fat in comparison to short crust and puff pastry.

Ingredients – Serves 12
1 pack of filo pastry
2-4 tbsp olive spread melted
4 red apples grated
1 cup of mixed peel/dried fruit
¼ cup of dates
1 tsp cinnamon
1 tsp mixed spice
1 tsp vanilla extract
1 large orange zested and juiced
¼ cup flaked almonds
2 tbsp of maple syrup/honey

Method
Pre heat oven 180 degrees Celsius gas mark 4.

Lightly grease a muffin tray.

Lightly brush each filo sheet with melted olive spread, layer 3 filo pastry sheets on top of each other and cut into large squares enough to fill a muffin case.

Place the filo sheets into each muffin hole and gently press down.

In a pan, add the apples, dates, mixed fruit, spices, honey, vanilla, orange zest and juice and maple syrup and simmer on a low heat until liquid has absorbed- about 15-20 minutes.

Place a spoonful of mixture into each filo case and bake in the oven for about 10 minutes until golden and crisp.

Take out of the oven, spray some gold dusting and sprinkle some flaked almonds on top of the filo mince pies.
