This stuffed dates recipe contains no added sugar; a great snack and sweet treat using nuts which is a source of protein and good fats.
1 box of medjool dates
1 bag of mixed nuts
¼ cup of smooth peanut butter
1 orange – rind only
¼ cup of desiccated coconut
Open the dates and take the seed out of each one, fill each date with a small amount of peanut butter, top each date with one nut each and sprinkle with orange rind and desiccated coconut.
Can use dark chocolate as a filling
