Halloumi beetroot salad

This recipe is full of flavour and colour, packed with nutrients and a good starter for a party. Salads are a great way to incorporate plenty of vegetables in one dish.

Ingredients – Serves 4
1 bag of mixed rocket leaves
1 pack of beetroot ready cooked
Handful of walnuts
1 pack of halloumi
1 lemon juiced
1 tbsp olive oil

Method
Drain the halloumi, slice into rectangles and lightly pan fry until golden on both sides.

In a large dish, add the rocket, slice the beetroot and add to the salad along with the cooked halloumi.

Add the lemon and olive oil, season with black pepper and gently mix.

Top with walnuts and serve.

Optional
Can use other cheeses such as feta
Sprinkle with sunflower and pumpkin seeds
Use any type of salad leaves
