Tofu is a source of protein for vegetarians and vegans. This is a great starter recipe using a healthier cooking methods such as baking and involves minimal cooking.
Ingredients – Serves 6 – 8
2 packs of firm tofu in a block
Handful of chives chopped
4 cups of panko breadcrumbs
2 cups of plain flour
½-1 cup of dairy free mayonnaise
4 tbsp water
1 tbsp olive oil oil
1 tsp paprika
1 small bottle of sweet chilli sauce
1 tbsp harissa paste
Method
Pre heat oven 200 degrees Celsius gas mark 7.
Drain the tofu, pat with a kitchen towel and place a heavy plate on top of the tofu and allow all the water to drain off, about 30 minutes.
Meanwhile, add the flour and bread crumbs on separate plates, mix the mayonnaise with the water in a bowl and set aside.
With the breadcrumbs, add the oil and paprika, season with salt and pepper and mix.
Once the tofu is dry, cut the tofu into large square pieces (nugget style). Coat the tofu pieces in flour, followed by the mayonnaise then the breadcrumbs until fully coated.
Place on a foiled baking tray and bake in the oven for about 30 minutes until golden, check halfway through.
In a bowl mix the sweet chilli sauce with the harissa and top with some chives, sprinkle over the remaining chives over the nuggets and serve.

Can use any dipping sauce
