This is a great recipe for vegans and vegetarians and with Christmas looming it’s a family friendly feast containing protein, vegetables, plenty of flavour and perfect for this winter weather.
Ingredients – Serves 6-8
4 large courgettes
2 tins of butterbeans drained
½ cup of breadcrumbs
2 tins of chopped tomatoes
2 tbs of harissa paste
1 bunch of fresh rosemary
4 cloves of garlic minced
2 tbs olive oil
1 tsp paprika
1 tsp dried mixed herbs
Method
1, Pre heat oven to 180 degrees gas mark 4
2, Using an oven proof dish add the tomatoes, butter beans, paprika, dried mixed herbs and season with salt and pepper and mix well.
3, Slit the courgettes across ¾ deep careful not to slice the courgettes all the way, place on top of the tomato mixture.
4, In a small bowl, mix the olive oil, garlic and harissa paste and mix well. Fill the courgettes with the paste ensuring everything is coated-use a brush. Bake in the oven for 30 minutes.
5, Take the courgettes out of the oven and mix the breadcrumbs with some olive oil and minced garlic and scatter over the courgettes, top with a few sprigs of rosemary and bake in the oven for another 10 minutes until golden.
6, Serve courgette bake with garlic bread/rice/couscous.
Optional
Can use aubergines/sweet potatoes
Add cheese as a topping
