Rice salad – cauliflower and broccoli
You can enjoy raw cauliflower and broccoli by turning it into rice, using a grater or food processor. In this recipe numerous vegetables have been used to help you meet your five a day.
1 teacupful cauliflower rice
1 teacupful broccoli rice
1 x 200g can chickpeas drained
1 x 200g can butterbeans drained
1 handful cherry tomatoes halved
1 handful parsley shredded
1 handful pomegranate seeds
1 handful olives
1 lemon juiced
1 tbsp garlic infused olive oil
2 green chillies – optional
Salt and pepper to taste
Add all ingredients in a bowl and mix with a spoon.
