Guacamole is a Mexican dish made up of mashed ripe avocados, lime or lemon juice, plus herbs such as coriander. In this recipe onions, tomatoes and fresh chillies have also been added. All ingredients are fresh and involves no cooking.
Ingredients – Serves 2
1 handful cherry tomatoes halved
2 avocados flesh scooped
2 limes juiced
2 red or green chillies finely chopped
1 handful coriander shredded
1 small red onion finely chopped
Salt and pepper to taste
Method
Add all ingredients in a bowl and mix with a potato masher.
Serve as a side dish, dip, or spread.
