Fruity Granola Flapjack recipe

These flapjacks are made using plenty of oats, nuts and dried fruit, a great snack for children. They are vegan friendly and suitable for those who do not eat dairy. These flapjacks also contain low sugar and oats as a source of fibre.


2 cups of oats
½ cup of peanut butter
¾ cup of dairy free spread or olive based spread
¼ cup honey or maple syrup
1 ripe banana
½ cup desiccated coconut
¼ cup chopped dates
½ cup mixed seeds-pumpkin and sunflower
¼ cup cranberries
¼ cup walnuts chopped
¼ cup almonds


  1. Pre heat oven gas mark 4 180 degrees
    In a large pan melt the spread, peanut butter, mashed banana and honey along with the chopped dates and combine.
  2. In a large bowl add all the dried ingredients, pour in the wet mixture and give a good mix until combined.
    Grease a deep tray and fill the tray with the flapjack mixture and flatten to a large rectangle or square shape.
  3. Bake in the oven for about 30 minutes until golden, bake an extra 10 minutes if not cooked.
  4. Allow the flapjack to cool and cut into squares.
