A wonderful bake using oats, fruit and nuts to make a naturally sweet bread. This banana bread is vegan friendly for those who don’t eat any form of dairy and can be eaten as a snack or even for breakfast, try it out!
4 ripe bananas
1 cup of vegetable oil
½ cup of chopped dates
1.5 cups of plain flour
½ cup chopped walnuts
1 tbsp cocoa powder-optional
1 tsp bicarbonate soda
1 tsp vanilla extract
1 tsp cinnamon powder
½ cup of desiccated coconut
1 cup of raspberries
1 cup of blueberries
2 tbsp chia seeds
6 tbsp water
1 tbsp honey – optional
Pre heat oven gas mark 4 180 degrees Celsius
Grease a loaf tin
Soak the dates in a large bowl of hot water until softened for about 10-15 minutes. Add only 3 of the bananas into the date bowl and mash, followed by the oil and vanilla extract and combine.
In another bowl add all the dry ingredients. Pour the dry ingredients into the banana mixture and gently fold until combined.
Pour the mixture into the loaf tin and even out. Cut the remaining banana into half and place on top of the mixture and bake for about 40 minutes. Check the banana bread half way through; insert a skewer in the middle to check if cooked. If skewer comes out clean take out the bread and allow to cool.
For the compote heat the blueberries and raspberries in a pan with a splash of water and allow to simmer on low heat until softened.
Soak the chia seeds with water and allow to thicken for about 10 minutes
Add the chia seed mixture into the fruit compote and gently stir. Allow to cook for about 15-20 minutes. Add honey if required, mix and turn off heat to allow the compote to thicken.
Serve banana bread with compote.
