Avocado and butter beans hummus

In this recipe a combination of chickpeas and butter beans have been used to add variety to the hummus. Both are often used by vegetarians as a source of protein. The avocado gives the dish creaminess and is a source of monounsaturated fats – a healthier fat. The recipe involves no cooking, just mixing all the ingredients with a masher.

Ingredients – Serves 8
1 x 200g tin of chickpeas
1 x 200g tin of butter beams
2 large avocados sliced
2 handfuls cherry tomatoes halved
1 handful coriander shredded
1 lemon juiced
1 tbsp garlic infused olive oil
Salt and Pepper to taste

Method
Add all the ingredients in a bowl and mix with a masher to desired consistency

Serve with wholemeal pitta bread or on an open sandwich
