Pearled spelt recipe
Pearled spelt has a nutty flavour and chewy texture. In this recipe its flavour is enhanced with caramelised mushrooms and red onions, then topped with lemon juice. A tasty recipe to help you meet your 5 a day.
1 teacupful pearled spelt rinsed
4 handfuls sliced mushrooms
1 red onion quartered and separated
3 tbsp garlic infused olive oil
½ lemon juiced
1 handful parsley shredded
1 handful cashews
Salt to taste
