Pearled Spelt with caramalised onions and mushrooms

Pearled spelt has a nutty flavour and chewy texture. In this recipe its flavour is enhanced with caramelised mushrooms and red onions, then topped with lemon juice. A tasty recipe to help you meet your 5 a day.

Ingredients – Serves 2

1 teacupful pearled spelt rinsed
4 handfuls sliced mushrooms
1 red onion quartered and separated
3 tbsp garlic infused olive oil
½ lemon juiced
1 handful parsley shredded
1 handful cashews
Salt to taste

Method

  1. Boil pearled spelt in salted water for 30 minutes, drain and set aside in a bowl.
  2. In a non-stick frying pan add half of the oil and sauté mushrooms, then add to the bowl containing cooked spelt.
  3. Add remaining oil in same pan and sauté onions, then mix with the spelt and mushrooms.
  4. Drizzle with lemon juice and garnish with parsley and cashews.
