This dish is a great pudding recipe and another way to include fruit in your diet. It’s simple and quick to put together and certainly hits the sweet spot.
Ingredients
4 large red apples cut into half, cored with skin on
1 tsp cinnamon
1 grapefruit juiced and keep the flesh aside
1 tbsp honey or maple syrup
1 tsp vanilla extract
Handful of almonds roughly chopped
Handful of sunflower seeds
Handful of pumpkin seeds
Handful of hazelnuts roughly chopped
1 cup of natural yoghurt
Method
Pre heat oven to 180 degrees gas mark 4.
Place apples skin side up on a baking dish.
Mix the grapefruit juice in a jug with vanilla, honey and add the grapefruit flesh and give a good mix.
Pour the mixture over the apples and bake in the oven for about 30 minutes until apples are cooked through.
Finally toast the seeds and nuts in a pan until roasted, sprinkle over the apples and serve with yoghurt.
