Devilled eggs make a tasty snack or can be presented when entertaining. Traditionally the egg filling is made with mayonnaise, in this recipe low fat Greek yogurt and lemon juice have been used. Dill has been added in the filling here but there are many other options.
Ingredients – Serves 6
6 eggs
1 teacupful low fat Greek yogurt
½ lemon juiced
1 tbsp chopped dill
Salt to taste
Chilli flakes (optional)
Method
In a saucepan bring water to boil, then add eggs one by one, and hard boil. Once boiled drain water, cool eggs under running cold water, then peel.
Halve the eggs lengthwise and scoop out the yolk and put in a separate bowl. Add the yogurt and lemon juice in the egg yolks and mix with dill and salt using a fork.
Finally scoop the egg yolk mixture into the egg white boats. Garnish by sprinkling with chilli flakes.
