These flapjacks are made with fresh and dried fruit, packed with oats and nuts and are an ideal snack for kids.
Ingredients
1 cup of oats
2 tbsp margarine/olive spread
1 apple or pear grated
1 orange zest
¼ cup dried apricots
½ cup of chopped dates
¼ cup of dried cranberries
2 tbsp honey
1 tbsp peanut butter
¼ cup almonds chopped
Method
Pre heat oven gas mark 4 180 degrees. Line a baking tray with grease proof paper and lightly grease.
In a pan, add the margarine, peanut butter, honey, dates, apple and orange zest and stir until melted.
In a large bowl mix the oats, apricots, nuts and cranberries. Pour the wet mixture into the oat mixture and gently mix until combined.
Place flapjack mixture on to the tray and gently flatten into a square shape.
Bake in the oven for 30 minutes until golden, bake longer if needed.]
Take out of the oven, cut into squares and allow to cool.
Optional
Can add any dried fruit and nuts
Add some dark chocolate
Add mixed seeds
