Chia seeds are a source of protein, omega 3 and fibre and are digested slowly keeping you fuller for longer. This is a great breakfast/pudding/snack recipe which is quick and easy to make.
Ingredients
½ cup of porridge oats
¼ cup of milk or water
2-3 tbsp of chia seeds
6 tbsp water
1/4 cup of strawberries cut into small slices
1/4 cup of mango chopped into piece
1/4 cup of natural yoghurt
Handful of pumpkin and sunflower seeds
Method
Soak the chia seeds in cold water for about 15 minutes until gel like consistency
Soak the oats in milk for about 15-20 minutes until softened and milk has absorbed
Place 1 tbsp of chia seeds into the bottom of 2 round glasses
Top one glass with some of the strawberries, then the other glass with some of the mangoes
Then add some of the soaked oats on top of the fruit into each glass
Add more strawberries and mangoes into each glass
Top with some yoghurt and sprinkle with seeds
