We should aim to eat two portions of fish per week, often many of us have cod in the form of fried fish and chips. In this recipe healthier cooking methods have been used, instead of frying the fish and potatoes they have been steamed along with the broccoli.
Steamed fish – Serves 2
Ingredients
2 cod fillets
1 tbsp olive oil
Salt and pepper to taste
Method
Drizzle cod fillets with oil, and season with salt and pepper. Place in steaming basket, cover and place over half filled saucepan of simmering water. Steam until cooked, then place under grill for a few 3 – 5 minutes. Garnish with lemon and chives
Steamed baby potatoes
2 handfuls of baby potatoes
Method
Place in steaming basket, cover and place over half filled saucepan of simmering water. Steam for 30 minutes.
Steamed broccoli
3 handfuls of broccoli
Method
Place in steaming basket, cover and place over half filled saucepan of simmering water. Steam until cooked
