Banoffee pie trifle
A real moreish recipe that hits the sweet spot but also healthy and nutritious. Bananas are a good source of potassium and naturally very sweet. Nuts are used in this recipe which is a source of protein and other nutrients. This recipe is quick, time saving and a great way to get some dairy into your diet.
4 large ripe bananas
2-3 cups of greek plain yoghurt
¼ cup of dark chocolate chips melted
1/2 cup of chopped hazelnuts
1/2 cup of ground almonds
1/2 cup of chopped almonds
Handful of pistachios
Heat the grill on a medium heat, slice the bananas in half-length ways (boat shaped) and place on a foiled grilled tray. Place in the grill and cook until slightly burnt, turn over and cook on the other side. The bananas will break apart when grilled and softened.
Toast the almonds and hazelnuts in a pan until roasted on a low heat.
Using 4 round glasses place the nut filling in the base of each glass, followed by a few tbsp of yoghurt and then add the bananas and top with some melted chocolate and pistachios.
Can add a squeeze of honey
Use other fruits such as mangoes or berries
Use toasted oats as a base instead of nuts
