This is a quick healthy recipe, time and cost saving. Great for kids as an alternative to pizza. You can make it your own using your favourite vegetables as a topping.
Ingredients – Serves 4
2 medium sized baguettes
Olive oil for brushing
1 bottle of red pesto
1 bottle of green pesto
1 pack of mozzarella cheese
Handful of basil
2 cups of mushrooms sliced
2 cups of cherry tomatoes cut into halves
1 cup of olives
Method
Pre heat the grill on a medium heat.
Cut the first baguette in four pieces length and width wise. Repeat this process with second baguette.
Place the baguettes on a tray and lightly brush them with olive oil.
Brush baguettes alternatively with red and green pesto, top with mushrooms, tomatoes and olives, tear the mozzarella into pieces and scatter over baguettes and place in the grill to heat for a few minutes until cheese has melted and pizza baguettes are crisp and golden.
Garnish with basil
Options
Can use tomato puree as a base
Try adding tuna/chicken pieces
Use wholemeal pitta or baguettes
