Avocado pasta

Pasta is a versatile ingredient that is cheap and can be used to cook in bulk. This recipe contains fresh ingredients and is great for a large gathering. Here we have used healthy fats such as avocado and fresh herbs to flavour the dish.

Ingredients
4-5 cups of pasta
4 ripe avocados skin and stone removed
1 pack of cherry tomatoes
1 bunch of basil
1 block of feta cheese crumbled into pieces
1 tbsp olive oil

Method
Pre heat the oven to 180 degrees celsius gas mark 4. Place tomatoes on a tray, drizzle with olive oil and roast in the oven for fifteen minutes until juices are released. Alternatively pan fry the tomatoes.

Bring a large pan of water to the boil, tip in the pasta and cook for 15-20 minutes on a medium heat until pasta is cooked. Drain and allow to cool.

Meanwhile blitz the avocado until smooth or alternatively use a masher or hand blender.

In a large dish, add the pasta, followed by the avocado sauce, tomatoes, half of the crumbled feta, half a bunch of the basil along with black pepper. Gently mix until combined.

Finally top with more basil and feta and serve.
