Tofu and mushroom curry

A satisfying recipe which is suitable for vegetarians as tofu is used instead of meat.

Ingredients – Serves 4
3 tbsp Rapeseed oil
2 teacups firm tofu cubed
1 large onion finely sliced
4 cups mushrooms sliced
2 tsp curry powder
1 pinch cayenne powder
½ teacup low fat coconut milk

Method
Heat the oil in a frying pan and sauté tofu until golden. Then remove from pan. In the same pan sauté onions and mushrooms until soft. Sprinkle the curry and cayenne powder, and cook on low heat for 2 minutes. Return tofu to the pan.

Add the coconut milk and bring to a simmer. Cook until sauce thicken.
