Vegetable hummus recipe
A variety of vegetables have been used in making this hummus. Chickpeas are a source of vitamins, minerals, protein and fibre. They are often used in a vegetarian diet. Usually hummus is made using a food processor, but in this recipe a fork has been used to blend the ingredients – if you want a smoother finish use a potato masher.
400g can chick peas drained
1 carrot finely chopped
1 celery stick finely chopped
¼ cauliflower finely chopped
2 cloves of garlic
1 tbso tahini
1 lemon juiced
1 handful shredded
Salt to taste
Pepper to taste
