Vegetable hummus

Veggie hummus with flatbread

A variety of vegetables have been used in making this hummus. Chickpeas are a source of vitamins, minerals, protein and fibre. They are often used in a vegetarian diet. Usually hummus is made using a food processor, but in this recipe a fork has been used to blend the ingredients – if you want a smoother finish use a potato masher.

Ingredients – Serves 6
400g can chick peas drained
1 carrot finely chopped
1 celery stick finely chopped
ΒΌ cauliflower finely chopped
2 cloves of garlic
1 tbso tahini
1 lemon juiced
1 handful shredded
Salt to taste
Pepper to taste

Bring to boil in salted water the vegetables and cook until tender. Drain and mix with chickpeas and mash coarsely with fork or potato masher.

Add tahini, lemon juice, salt and pepper. Garnish with coriander and serve with wholemeal pitta bread
