This egg based dish is an excellent way to include vegetables in your diet. In this recipe peas, onions, potatoes, and chives have been added. The possibilities are endless; you can add your favourite vegetables and herbs. Often a frittata is made in a hob to oven pan, but this recipe shows an inexpensive cake tin is just as effective.

Ingredients – serves 2


3 tbsp garlic infused olive oil
1 onion finely sliced
6 new potatoes washed and finely sliced (circles) with skin
4 eggs
3 tbsp semi skimmed milk
1 teacupful thawed frozen peas
1 handful chives chopped
100g feta cheese crumbled
Black pepper to taste

Method

  1. In frying pan heat oil, then add onions and potatoes until soft and golden.
  2. Meanwhile crack eggs in a bowl, add milk, and season. Then add chives, feta, peas, and mix .Once the ingredients in the frying pan are ready put them into the egg mixture and combine.
  3. After greasing a cake tin, pour the mixture into it and bake for about 20mins or until cooked, on 170c /gas mark 3
