This egg based dish is an excellent way to include vegetables in your diet. In this recipe peas, onions, potatoes, and chives have been added. The possibilities are endless; you can add your favourite vegetables and herbs. Often a frittata is made in a hob to oven pan, but this recipe shows an inexpensive cake tin is just as effective.
Ingredients – serves 2
3 tbsp garlic infused olive oil
1 onion finely sliced
6 new potatoes washed and finely sliced (circles) with skin
4 eggs
3 tbsp semi skimmed milk
1 teacupful thawed frozen peas
1 handful chives chopped
100g feta cheese crumbled
Black pepper to taste
Method
In frying pan heat oil, then add onions and potatoes until soft and golden.
Meanwhile crack eggs in a bowl, add milk, and season. Then add chives, feta, peas, and mix .Once the ingredients in the frying pan are ready put them into the egg mixture and combine.
After greasing a cake tin, pour the mixture into it and bake for about 20mins or until cooked, on 170c /gas mark 3
