This classic summer English dessert is usually made with double cream. In this recipe low fat strawberry yogurt and fat free fromage frais have been used instead. It is easy to make and seasonal.
Ingredients – Serves 4
4 teacups strawberries chopped
1 x 100g low fat strawberry yogurt
1 teacupful fat free fromage frais
1 tbsp sugar
3 meringue crusts roughly crushed
Method
Blend half of the strawberries in a bowl until smooth, then add yogurt and mix.
Put the remaining strawberries in another bowl – add sugar, fromage frais, and stir to combine. Then add this to the above mixture and swirl to give a marbled effect. Finally add the meringue.
Serve chilled , and garnish with fresh strawberries.
