Vegetable couscous uppama

This is a healthy dish incorporating 5 a day and uses lots of herbs for flavour and plenty of vegetables.

100g couscous
½ cup chopped carrots
½ cup of chopped green beans
½ cup chopped tomatoes
½ cup of chopped peppers
½ cup of frozen peas
Handful of fresh coriander chopped
1-2 tbsp olive oil
1 cup of water
4-5 green chillies
1 lemon juiced
½ cucumber sliced

In a pan heat the oil, add the chillies and saute for a few minutes, add all the chopped vegetables and saute for 3-4 minutes, season with salt and pepper and mix.  Add the water into the vegetables and allow to boil.

Finally add the couscous to the water and cook until water is absorbed. Garnish with coriander and lemon juice.

Serve couscous with cucumber slices.
