Couscous salad with halloumi and chilli sauce

The recipe for this meal came from one of the participants on the cook & eat sessions, with suggestions from the rest of the group. It is made up of couscous salad, grilled halloumi, and chilli dressing.

Ingredients – serves 4
Couscous 200g
Lemon 1 juiced
Coriander handful
Olives handful
Cherry tomatoes handful
Carrots grated handful
Iceberg lettuce handful
Corn 4 tbsp
Cucumber handful diced
1 tbsp olive oil
Salt to taste

Method
Add half lemon juice to dry couscous and mix. Leave to stand for about 10 minutes, then prepare couscous as per instructions on package. Meanwhile put all the other ingredients in a bowl; once couscous is ready add into other ingredients and mix.
