Pancakes are so versatile and great to make with children. This recipe incorporates fresh fruit and is a good healthy breakfast option.
Ingredients
1 cup of self-raising flour
2 eggs
1 cup of semi skimmed or non-dairy milk
1 tsp baking powder
1 cup of fresh blueberries
¼ tsp cinnamon
¼ cup of oats
Pinch of salt
Honey – optional
Method
In a large bowl, add the flour, salt and baking powder and mix.
In a jug whisk the milk, eggs and oats.
Make a well in the middle of the flour mixture and pour the wet ingredients and gently whisk. Finally add the fresh blueberries and combine.
Heat a large frying pan with some oil. Ladle mixture into round small circles and cook pancakes until bubbles form and flip the other side.
Serve pancakes with a drizzle of honey.
