This recipe uses fresh fruit and filo pastry which is lighter in texture. Another dessert packed with fresh fruit and a reduced amount of sugar.
1 pack of filo pastry/3-4 filo sheets
8-10 apples – mixture of green and red peeled and quartered
3 tbsp honey
¼ cup raisins
1 tsp cinnamon powder
Oil to glaze
Handful of flaked almonds – optional
Pre heat oven to 180 degrees Celsius gas mark 4.
In a pan, cook the apples along with the cinnamon and raisins with a splash of water until softened. Add the honey and gently mix.
Using a flan dish, spread the apple filling and then using a brush gently glaze each filo sheet with some oil and place 1 filo sheet on top of the apple filling and gently fold sides in and press down, followed by another layer and use up 3 – 4 sheets until pie is covered.
Bake in the oven for 15 – 20 minutes until golden, top with flaked almonds and serve with natural yoghurt.
