Stuffed peppers are a great cheap meal and you can add any filling you like, its quick, simple, healthy and a great way to incorporate The Eatwell Guide and include all your food groups in one meal.
Ingredients
3 mixed large peppers
1 onion chopped
1 tbsp olive oil
Handful of crumbled goats cheese
1 microwave pouch wild rice or any rice of your choice
1 cup of passata or tin of chopped tomatoes
1 tin of mixed beans drained (pulses)
Handful of pine nuts
Handful of chopped coriander
1 tsp chilli flakes
1 tsp paprika
1 tsp of garam masala
Method
Pre heat oven gas mark 6 180 degrees Celsius
Cut peppers in half, lightly brush with some oil and place on a baking tray and bake for about 10-15 minutes until soft
Take peppers out and leave to cool
Meanwhile in a pan, heat olive oil, add onions and saute until browned. Add the beans, rice and passata and mix well. Season with salt, pepper, chilli flakes, paprika and garam masala mix well and finally add chopped coriander. Allow to cook for 10 minutes.
Fill the peppers with rice filling, top with goats cheese and bake in oven for about 15-20 minutes until browned.
Top peppers with pine nuts and serve
