This is a great recipe that certainly is yummy, a really good way to use left over ripe fruit and get your fibre in. It’s a great simple dessert that involves minimal cooking.
Ingredients
3 ripe peaches or nectarines
1 large orange juiced
1 tsp vanilla extract
¼-1/2 slab of dark chocolate
½ cup of hazelnuts
1 cup natural yoghurt
Method
Pre heat oven 180 degrees gas mark 6
Cut peaches in halves, stone removed and place in a large oven proof dish
In a pan add the orange juice and vanilla and simmer for 5 minutes
Pour the juice over the peaches and bake in the oven for 20-30 minutes until softened and slightly burnt.
Melt the dark chocolate and drizzle some over peaches, top with nuts and serve with yoghurt.
Optional
Can use any ripe fruit
Add the baked fruit into your porridge
