Summer and barbecues go hand in hand, just as barbecues and potato salad do. In this recipe a spicy, healthy dressing is used instead of the traditional mayonnaise. Of course potato salads are not just for barbecues and can be enjoyed at any time.
Ingredients – Serves 4
400g Maris Piper potatoes, peeled and cut into small cubes
Basil, handful
Parsley, handful
1 lemon juiced
2 spring onions, sliced
1-2 tbsp garlic infused olive oil
1-2 green chillies
Salt to taste
Garnish
Pine nuts
Method
Cook potatoes in boiling water for 10 – 15 minutes until soft, and drain. For the dressing blitz basil, parsley, lemon juice and oil in a blender. Then put potatoes in bowl, add spring onions, dressing and mix with a fork. Garnish with pine nuts.
Best served chilled
