When it comes to healthy eating on a budget, it is difficult to beat spaghetti. In this recipe whole wheat spaghetti is used, it has fibre and other vitamins and minerals. Cherry tomatoes, basil, and garlic infused olive oil were also added; garnished with low fat cheese. The whole meal cost under £3:00 for 2 people and took less than 15 minutes to cook. What is there not to like?
Simply spaghetti– Serves 2
150 g of whole wheat spaghetti
2 handfuls of cherry tomatoes
1 handful of basil
2 ½ tbsp garlic infused olive oil
Salt to taste
Low fat cheese of your choice
Add salt to boiling water and ½ tbsp of oil, then place spaghetti in the boiling water and cook according to instructions on packet.
Cut tomatoes in half, tear basil, and sauté in 2tbsp of oil until slightly wilted. Add a little warm water if desired. Once the spaghetti is cooked mix it in this sauce. Serve with grated cheese of your choice
