Cauliflower Chickpea salad
This is a great recipe that is quick and cheap. Using tinned products can save time and money and are great as store cupboard ingredients. Salads are a great way to incorporate 5aday and a nutritious way to get variety in your diet.
Ingredients
1 large cauliflower minced using a food processor or pre brought cauliflower rice
Handful of cherry tomatoes
1 tin of chickpeas drained
1 tin of sweetcorn drained
1 tin of baby potatoes drained and cut into halves
Handful of parsley chopped
1 tbsp olive oil
1 lemon juiced
Method
Simply add all the ingredients in a large bowl, season with salt and pepper, add olive oil and lemon juice and give a good mix.
Serve with natural yoghurt
Optional – add other protein sauces such as chicken, tuna or egg
A very berry smoothie
Smoothies are a great way to get more nourishment from your diet. Vegetables can be included in your smoothie as well as fruit. Smoothies are ideal for summer, a cooling drink that contains fresh or frozen fruit and they’re quick and simple to make. Frozen fruit also keeps well and is handy to have in the freezer.
Ingredients
1 bag of mixed frozen banana and berries
1 pot of natural yoghurt
1 avocado
½ cup water
Method
Simply whiz ingredients using a blender.
Optional – can use fresh fruit and vegetables
