Samosas don’t always have to be fried, they can also be enjoyed by using healthier cooking methods such as baking in the oven. Here they are served with a coriander chutney/dip.
Vegetable samosas
Ingredients
10 frozen vegetable samosas
Sunflower oil spray
Method
Preheat the oven to 200 C/gas mark 6. Spray baking tray with oil, place samosas in baking tray and lightly spray them with the oil. Then allow them to bake for about 20- 30 minutes, turn them once during cooking.
Coriander chutney/dip
Ingredients
2 handfuls of washed and chopped coriander
2 green chillies
1 clove garlic
½ – 1 lemon juiced
1tbsp desiccated coconut (optional)
Salt to taste
Method
Mix all the ingredients in a food processor and blend
Serve samosa with chutney/dip
