This recipe serves 4; pasta is a great lunchbox option and a source of carbohydrates. Pasta can be a good option for lunch especially for children and this recipe uses a variety of vegetables to meet your 5aday.
2 cups of wholegrain spelt pasta
1 butternut squash peeled and chopped into cubes
1 cup of baby tomatoes
2 handfuls of broccoli florets
2 handfuls of cauliflower florets
4 cooked beetroot chopped
1 cup of feta cut into cubes
1 yellow pepper cut into large pieces
2 tbsp olive oil
Salt and pepper to season
1 tsp paprika
1 tsp mixed herbs
2 tbs tahini paste (sesame spread)
Pre heat oven to gas mark 4, 180 degrees Celsius.
On a tray add all the vegetables except beetroot, marinate with olive oil and season with salt, pepper, paprika and herbs and bake in the oven for 40 minutes until cooked. Allow vegetables to cool once cooked.
In a pan of boiling water cook the pasta according to packet instructions, drain and allow to cool.
In a large dish toss the pasta and roast veg, add the feta and beetroot, add the tahini and mix until combined.
