This salad is a great dish which incorporates a variety of colourful ingredients. Salads are a great option to meet your 5aday, full of fibre and goodness and super simple to rustle up.
Ingredients:
2 cups of raw cauliflower rice – can buy ready made or simply blitz cauliflower in a food processor
1 cup of tinned chickpeas drained
Handful of pitted olives
1 cup of baby tomatoes halved
1-2 handfuls of chopped parsley
1 tbsp of olive oil
Juice from ½ a lemon
Method
Add all the ingredients in a dish, along with olive oil, lemon juice, season with salt and pepper and gently toss until combined.
Serve with wholemeal pitta bread and low fat yoghurt

Add salad leaves/cucumber
