Ingredients
2 medium sized papayas cut into halves
Honey for drizzle
Optional – yoghurt
2 handfuls of mint leaves chopped
2 lemons juiced
4 passion fruits
Method
Preheat oven to 200 degrees Celsius, gas mark 7. Scoop out seeds of papaya, place on a baking tray and pour lemon juice over papaya.
Bake in the oven for 15-20 minutes
Once baked, cut the passion fruit in halves and scoop out pulp with a spoon, fill the papaya with the passion fruit pulp, scatter with chopped mint, drizzle honey and serve with yoghurt
