This recipe serves 4, a quick, simple recipe using a healthy method of cooking. The fish, potatoes and sweet potatoes have been baked instead of fried. Sweet potatoes can be an alternative to potatoes as they count towards your 5aday. This meal is a good choice for including fish in your diet.

4 fresh cod fillets without skin
1 packet of breadcrumbs
2-3 eggs beaten
1 cup of plain flour
4 large potatoes
4 large sweet potatoes
4 cups of frozen peas
2-3 tbsp of rapeseed oil
Salt and pepper to taste


  1. Pre heat oven to 200 degrees celsius/gas mark 7
  2. Coat both sides of fish with plain flour then dip into beaten eggs and finally coat both sides with breadcrumbs and bake in the oven for about 20 minutes or until golden.
  3. Meanwhile slice the sweet potatoes and normal potatoes with skin on into wedges. Place on a baking tray, drizzle with oil and season with salt and pepper. Bake in the oven for 30-40 minutes/until golden.
  4. In a pan, cook the frozen peas in water for about 5-10 minutes ideally overcooked. Once drained mash the peas until desired consistency and season with salt and pepper.
